Assalamualaikum semua,
Resepi ini saya olah dari channel Maangchi – “Korean Honey Butter Fried Chicken” untuk lebih sesuai selera Malaysia.

Hi everyone,
This recipe was inspired by a Korean you tuber Maangchi -“Korean Honey Butter Fried Chicken”.
I adjust it a bit to suit my Malaysian tastebud.

Bahan bahan yang diperlukan
Ingredients

1. Sotong 200-300 gram
Squid 200-300grams
Salutan tepung:-
Fried batter:-
a. Tepung gandum/ 3sb
all-purpose flour 3tbs
b. Tepung Ubi/jagung/beras 2sb
Tapioca flour 2tbs
c. Lada hitam 1sk
Black pepper 1ts
d. Garam 1sk
Salt 1ts
e. Bawang putih 1biji (dihiris halus)
Garlic 1clove(chopped)
f. Soda bikarbonat 1sk
Bocarbonate of soda 1ts
g. Telur 1biji
Egg 1

Bahan untuk sos:-
Sauce ingredients:-

a. Madu 1sb
Honey 1tbs
b. Gula 1sb
Sugar 1tbs
c. Sos cili 2-3sb
Chilli sauce 2-3tbs
d. Cili potong/lada blender
/sambal sedia ada 1sb/secukup rasa (optional)
Sliced chillies/blended chillies
/chilli flakes 1tbs(optional for added spiciness)
e. Mentega 2sb
Butter 2tbs
f. Bawang putih (dihiris halus) 5-6 ulas
Garlic 5-6cloves
g. Biji bijan (yg telah dipanggang) 1sk
Roasted sesame seeds 1ts

Cara memasak:-
Basuh sotong dan buang paruh didalam mulut sotong. (bahagian ini tidak sedap untuk dimakan). Kelar mata sotong supaya tidak meletup ketika menggoreng.
Potong sotong dan ketepikan.
Panaskan kuali dan isi minyak untuk menggoreng. Bila api sudah panas perlahankan ke api sederhana. Masukkan sotong yg telah disalut tepung dan goreng hingga separuh garing. Angkat, tunggu 1 minit dan goreng semula sehingga garing. Angkat dan ketepikan.
Panaskan kuali dan kecilkan api. Cairkan mentega dan tumiskan bawang putih. Bila warna sudah keperangan masukkan gula, cili sos, sambal, dan madu. Kemudian masukkan garam. Boleh tambah bahan-bahan ini mengikut citarasa masing-masing. Masukkan sotong dan kacau rata. Tutup api dan hidang. Taburkan biji bijan(picit2kan supaya bau sesame keluar). Boleh juga titiskan minyak bijan kalau suka.

Cooking instruction:-
Prepare and clean the squid .Remove the bulge/the beak from the mouth part. (This part is hard to eat) Slit the eyes so that it won’t pop when frying.
Cut to medium to small ring size and set aside.
Prepare oil for frying. When the oil is hot turn down your heat to medium. Put the squid in and fry until almost crispy. Take it out, wait 1 minute and fry again until crispy. (Double frying technique) Then set aside.
Heat a clean pan and use low heat. Put in the butter and when it melt you can add the chopped garlic. When it turn golden brown add in sugar, chilli sauce, blended chillies or chilli flakes and some salt. These ingredients can be adjusted according to taste. Lastly add the fried squid and mix well. Then it’s ready to serve. Sprinkle some roasted sesame seed on top (pinch the sesame to push the aroma out) or you can just add a bit of sesame oil.
